![]() On Wednesday, we picked up our new 4 ton fermenter. It is an open top Rousseau that our friend Jérôme Aubin helped us find. (Jérôme is the owner of Artisan Barrels, a great resource for barrels, and the wine maker/owner of Aubin Cellars.) We especially like the shape of the Rousseau's - it is slightly narrower at the top. This helps keep the cap moist. It has only been used for Pinot Noir to date - we plan to make two lots of Syrah in it this year. More photos shortly. | ![]() Twitter Updates |
