Yesterday, we checked on our Roussane while topping barrels. We tasted this a few weeks backs with our grower and it was still sweet but not too sweet. It continues to drop suger.
We have had whites take up to six months before - as a result, we aren't worried as long as it keeps moving. When topping, taking the time to listen as the bung comes off gives the first clue. The little swoosh means gas. Next, an ear over the bung hole lets us know that the little yeast continue to be noisy. We are really excited about this wine - very exotic. |
